Hearty, comforting, and loaded with all the flavors of classic lasagna, this lasagna soup is quick, and delivers on all counts. It’s the perfect one pot meal of tender pasta, a rich tomato based broth, and gooey cheese, for busy weeknights or cozy weekends.
First Lasagna Soup Experience Of Mine
Despite raving about lasagna soup from other sites (that won’t ruin my recipe here), I didn’t take steps to fix that until I found myself craving lasagna without the time or patience to layer and put in the oven. Filling my kitchen with that same irresistible garlic, tomato, and Italian spice scented soup came together quickly once the soup was simmering. I love each spoonful since it’s a warm hug and a huge family favourite.
Ingredients
For the Soup:
Ground beef or Italian sausage: 1 lb
Olive oil: 1 tbsp (if needed)
Onion: 1 medium, diced
Garlic: 4 cloves, minced
Crushed tomatoes: 28 oz can
Tomato paste: 2 tbsp
Chicken or beef broth: 6 cups
Italian seasoning: 1 tbsp
Dried basil: 1 tsp
Crushed red pepper flakes: ¼ tsp (optional, for spice)
Lasagna noodles: Broken up to be 8–10 bite sized pieces
Salt and pepper: To taste
For the Cheese Topping:
Ricotta cheese: ¾ cup
Mozzarella cheese: 1 cup, shredded
Parmesan cheese: ½ cup, grated
Fresh parsley or basil: 2 tbsp, chopped
Step-by-Step Instructions
Step 1: Cook the Meat
Put a large pot on medium heat. Cook ground beef or Italian sausage, breaking it into little pieces as it cooks.
Then, if the meat is lean, add a dash of olive oil. Scrape out any grease from the crock pot leaving about 1 tablespoon in the pot.
Step 2: Sauté the Aromatics
Then, cook in the pot the diced onion until softened for 5 minutes.
Cook the minced garlic in for 1 min until fragrant, stirring as it cooks.
Step 3: Build the Soup Base
Add the tomato paste and stir in until the tomato paste turns brown in 1–2 minutes, for a deeper flavor.
Then add the crushed tomatoes, broth, Italian seasoning, basil, red pepper flakes (if using), a pinch of salt and pepper and bring it all to a boil. Bring the mixture to a boil.
Step 4: Cook the Pasta
Stir the broken lasagna noodles into the heat and reduce to simmer. Blanch the noodles for 10–12 min until tender. This will prevent sticking, stir occasionally.
Step 5: Prepare the Cheese Topping
To make it, combine ricotta, mozzarella, Parmesan and parsley or basil in a small bowl. Set aside.
Step 6. Serve
Then stir some soup into bowls with soup ladles and make a small dollop of mix cheese on top. The cheese will slightly melt and crust the soup with a smooth, cheesey texture.

Use Short-Cut Pasta: To get ready even quicker, it’s perfectly okay to sub in penne or rotini short shapes of pasta instead of lasagna noodles.
Change The Protein: Ramp it up and use rare examples that are turkey, chicken, any plant based protein.
Make It Creamy: To make the dish less coarse you can use a half cup of heavy cream or milk.
Leftover Friendly: However, since the pasta is not mixed in the soup can be refrigerated, however.
