I’ll never forget the first time I made shrimp scampi in my own kitchen. This was a busy weeknight and I needed a no fuss, quick dinner idea that was a little fancy, something new. I determined that shrimp scampi would work, and I had shrimp in the freezer, pantry staples like garlic, butter, and pasta.
The garlic and I sloshed around in the pan, sautéing and deglazing with white wine, and an amazing aroma filled my kitchen. The dish was ready in under 30 minutes, but somehow by the time it was I felt like it was restaurant quality. It was an immediate favorite and my family loved it.
Ingredients
For the Shrimp Scampi:
Shrimp: (Your choice: tails on or off) peeled and deveined large or jumbo, 1 lb
Olive oil: 2 tbsp
Butter: 4 tbsp
Garlic: 4 cloves, minced
White wine: Chicken broth instead of alcohol (½ cup or substitute with chicken broth).
Lemon juice: 2 tbsp (about half a lemon)
Red pepper flakes: (optional to add a little bit of heat) 1/4 tsp
Salt and pepper: To taste
Fresh parsley: 2 tbsp, chopped
For Serving (Optional):
Pasta: Linguine or spaghetti 12 oz
Parmesan cheese: Grated, for garnish
Crusty bread: For dipping
Step-by-Step Instructions
Step 1: Cook the pasta (If desired)
Put the salted water on to boil, and then get the macaroni and boil as specified on the package. After drain, forget for a moment, but save 1/2 a cup of water for the pasta.
Step 2: Shrimp Sauté
In a medium skillet heat olive oil over moderate heat.
They suggest arranging the shrimps in a single layer, waiting 1 to 2 minutes each side until the shrimp is opaque and pink in color. Remove them from skillet and set aside shrimp.
Step 3: Making Scampi Sauce Preparation
Put butter into the same pan, and let it heat up.
After 30 seconds, put garlic and red pepper (if you are using this). It should take about half a minute sauté until fragrant.
If you have it, add white wine (or chicken broth) and lemon juice as well. It’s a little bit like making gravy: let the sauce sit for a minute, and simmer it for 2–3 min max, as it will reduce a bit.
Step 4: Combine and complete.
To make sure the sauce is totally absorbed add the shrimps back into the pan the sauce was deep-fry and a 1-2 mins.
If you want to actually eat it, and with pasta, turn down the heat and put the spaghetti in the skillet. Finally, toss the spaghetti in the skillet then. If there’s a lot of sauce, write the pasta water down so you can use it to thin down the sauce when the pasta is drained.
Sprinkle with salt and pepper … serve as desired.
Step 5: Garnish and Serve.
This shrimp scampi can have some freshly obtained parsley thrown over it.
Eat it all at once with some pasta, with some crunchy loaf of bread or on its own. If you want, you can sprinkle grated parmesan.

Use Fresh Shrimp: You can use fresh or frozen shrimp, but make sure they’re thawed and patted dry before you cook them.
