For the Cake:
All-purpose flour: 2 cups
Granulated sugar: ¾ cup
Baking powder: 2 tsp
Salt: ½ tsp
Butter: ½ cup (1 stick), melted
Milk: ¾ cup
Eggs: 2 large
Vanilla extract: 2 tsp
For the Crumb Topping:
Brown sugar: ¾ cup
All-purpose flour: ¾ cup
Cinnamon: 1 ½ tsp
Butter: 1 stick, cold and cubed into ½ cup
Optional Glaze:
Powdered sugar: ½ cup
Milk: 1–2 tbsp
Vanilla extract: ½ tsp
Step-by-Step Instructions
Step 1: Preheat the Oven
Place the oven to 350°F (175°C).
Set aside, grease a 9×9 side x 8 inch baking pan.
Step 2: Make the Crumb Topping
Mix flour, brown sugar and cinnamon in a bowl.
After that, add your cubed butter and use a fork, hands basically, and mix until it’s mixed but crumbly. Set aside.
Step 3: Prepare the Cake Batter
Whisk, in a large bowl flour, sugar, baking powder and salt together.
To make another bowl, combine milk, eggs, vanilla with melted butter.
Mix the wet ingredients into the dry ingredients just until they’re combined. Do not overmix.
Step 4: Assemble the Coffee Cake
Pour the batter into the prepared pan then, spread over it until it is even.
Overtop the heat the batter with the crumb topping.
Step 5: Bake
Set bake time aside at 35–40 minutes, or until a toothpick inserted into the center in the center comes out clean.
Step 6: Make the Glaze (Optional)
Mix powdered sugar, milk, vanilla and whisk until smooth in a small bowl.
Drizzle over the cooled cake.
Step 7: Serve
Cool the cake, about 10–15 minutes, before slicing. Can be served warm or room temperature.
Tips for Perfect Coffee Cake
Cold Butter for Crumbs: Cold butter is the key to getting crumbly fingertips.
Don’t Overmix: Mixing for too long can make a cake dense: simply stir until incorporated.
Make Ahead: Stored, used properly, coffee cake will keep for up to 3 days in an airtight container on the counter.
