I was really amazed when I replicated the first time I made a Chipotle style burrito bowl at home — how easy it was to recreate their fresh vibrant flavors. Ingredients
For the Base:
Rice: Or 2 cups cooked (white or brown)
Lime juice: 2 tbsp
Cilantro: 2 tbsp, chopped
For the Protein:
Chicken breast or thighs: steak, tofu or shrimp (1lb [or 1 lb])
Chipotle peppers in adobo sauce: 2 tbsp, minced
Garlic: 2 cloves, minced
Cumin: 1 tsp
Paprika: 1 tsp
Oregano: ½ tsp
Olive oil: 2 tbsp
For the Beans:
Black or pinto beans: Drained and rinsed 1 can (15 oz)
Garlic: 1 clove, minced
Cumin: ½ tsp
Olive oil: 1 tbsp
Toppings:
Salsa: Fresh tomato or corn salsa
Guacamole: A little lime, salt, and pepper just mashed up avocado
Cheese: Monterey Jack or extra-shredded cheddar
Lettuce: Shredded Romaine
Sour cream: A dollop
Hot sauce: For extra kick
Step-by-Step Instructions
Step one: Marinate and Cook the Protein
Marinate: In a bowl combine garlic with cumin, paprika, oregano and minced chipotle peppers with some olive oil. Then coat the chicken and let it marinate for a least 30 minutes.
Cook: Put a skillet on the heat over medium. After about 5–7 minutes per side, or until the internal temperature reaches 165°F (74°C), you’re good to go. Slice or shred after letting rest for 5 minutes.
Step Two: Cook the Rice
Drop the rice in the water, boil until done in the water and turn off stove.
When finished add some sourness with lime juice and cilantro.
Step Three: Cook the Beans
Place olive oil in a skillet and cook on medium heat. Cook the garlic until fragrantly.
Add beans, coriander and a little dash of salt and cover. Heat for around five minutes.
Step Four: Put Together the Bowl
Sprinkle rice with cubed lime and cut cilantro, and prepare a bed of rice.
Cook the beans and the protein, and then place them.
So some salsa, guacamole, grated cheese, and lettuce e.g. organic.
