If you were to ask me for my go to meal for any occasion, it’s burritos. They never fail to impress no matter if it’s for a quick weeknight dinner or a crowd pleasing dish for a gathering. So I remember when I took my first stab at making burritos from scratch—the flavor experimenting and layering was kind of fun. Wrapping everything in a neat package and making it all feel so much simpler, made me feel like a pro chef!

Burrito Recipe
Ingredients (Makes 4 Burritos):
For the Filling:
Your protein of choice: 1 lb ground beef, chicken, or plant based alternative.
White, brown, or Mexican rice. (cooked rice)

1 small onion (diced)
1 red bell pepper (diced)
Cheddar, Monterey Jack, or Mexican blend 1 cup shredded cheese (1 cup is approximately 4 ounces.)

1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/4 teaspoon garlic powder

Instructions:
Cook the Filling:
In a skillet heat olive oil over medium heat. Sauté until softened (3–4 minutes) – add the diced onion and red bell pepper along with the salt and pepper.
Cook the ground meat (or plant based replacement) until browned and breaking it into small pieces.
Chili powder, cumin, paprika, garlic powder, salt and pepper are stirred in. Mix well to coat the meat.
Add the Beans and Rice:
Add the black beans, cooked rice and salsa. Flavors are combined after another 2–3 minutes of cooking.
Warm the Tortillas:
Place a few seconds of heat — either on a dry skillet or on the microwave — each tortilla to make them pliable.
Assemble the Burritos:
Lay a tortilla flat. Into the center, spread a spoonful of sour cream, then a portion of filling.
Then add the shredded cheese, guacamole, lettuce and tomatoes. Be careful not to overfill!
Wrap the Burrito:
Roll the filling tightly from the bottom encasing the sides, then fold in the parts.
Serve:
Cut into pieces if wanted, and serve right away. Pile extra salsa, chips, or some side salad.
