Ingredients
For the Meatloaf:
Ground beef: 2 lbs would be preferred (80/20 for a nice fat to flavor ratio).
Old-fashioned oats: ¾ cup
Milk: ½ cup
Eggs: 2 large
Onion: finely chopped or grated 1 small
Garlic: 2 cloves, minced
Ketchup: ¼ cup
Worcestershire sauce: 1 tbsp
Dried parsley: 1 tsp
Salt: 1 ½ tsp
Black pepper: ½ tsp
For the Glaze:
Ketchup: ½ cup
Brown sugar: 2 tbsp
Mustard: 1 tbsp (yellow or Dijon)
Step-by-Step Instructions
Step 1: Preheat the Oven
Put your oven on 350°F (175°C). Or, just line a baking sheet with foil or parchment paper for easy cleanup, or use a loaf pan.
Step 2: Prepare the Oatmeal Mixture
In separate small bowl, use milk and oats. Leaving it sit for 5 – 10 minutes to soften.
Step 3: Mix the Meatloaf Ingredients
Place all of the ground beef, softened oats, eggs, onion, garlic, ketchup, Worcestershire sauce, parsley, salt and pepper into a large mixing bowl.
Just combine it by gently mixing with your hands, or a large spoon. An over mixed meatloaf can be dense.
Step 4: Shape the Meatloaf
Bring the mixture to baking sheet prepared, and shape it into a loaf of about 9×5 inches. You can also press it into a loaf pan.
Step 5: Make the Glaze
Put ketchup, brown sugar and mustard in a small bowl and whisk together.
Step 6: Bake the Meatloaf
Top the meatloaf with all the remaining glaze and then spread half of it evenly over the top.
Remove from the oven, spread remaining glaze on top and bake for 45 minutes.
Bake for an additional 15–20 minutes until the internal temperature reaches 160°F (71°C) then return to the oven.
Step 7: Rest and Serve
After 10 minutes, slicing the meatloaf will retain the juices.
Serve in slices with mashed potatoes, green beans or a simple salad.

Choose the Right Beef: Since they make the meatloaf juicy, use some ground beef with a little fat (80/20).
