My Experience: A Warm Hug on a Cold Day
I have a very vivid picture of myself making that first Grilled Cheese Sandwich with Tomato Soup —one rainy day I think, and I just wanted something hot. Many thanks is owed to Van Dusen Photography and Dry Bones for allowing me to feature one of their meals at this sandwich shop: watching the cheese become a delicious, goopy mess and that crunchy, golden sandwich being submerged into its steaming tomato soup bowl made this writer feel right at home. Just as the expression goes, breakfast like this makes the regular to be special. This eternal duo has remained one of my favorite dishes, which warm up in the cold season after a day of work or studying.
Have I mentioned the most authentic way to make a grilled cheese sandwich – the perfect one?
Ingredients:
White, whole-grain or sourdough bread toasted and buttered can also be used in this recipe or 2 slices of any bread.
(One is as good as the other—each one has its own texture and taste.)
2 tablespoons butter which must be soft.

2–3 slices of cheese (preferably cheddar, mozzarella or a combination)
Acidity comes from cheddar and gooiness – from mozzarella.
Instructions:
Preheat the Pan:
In another bowl, mix 1 cup rotisserie chicken, 1/4 cup mozzarella cheese, ½ cup marinara sauce, and 2 tablespoons fresh parsley.
Assemble the Sandwich:
Take each bread slice and spread it with butter on one side of the each slice. Take one slice, with its butter side laid flat on the pan. Place the slices of cheese on top and finally place the second piece of bread on top of it with butter facing up.
Grill to Perfection:
Fry for 2-4 minutes on each side turned occasionally and gently pressing down on the bread with a spatula, until the bread gets crispy and the cheese melted. When I first made this, I had to literally taste it before you could get it on a plate!
Slice and Serve:
The sandwich is best cut diagonally as is expected.
Classic Tomato Soup
Ingredients:
Olive oil or butter, 2 tablespoons
1 small onion, finely chopped
(It gives the soup a sweet base.)
2 garlic cloves, minced
(For a burst of flavor.)
28 oz canned, crushed tomatoes
(Rich and tangy taste is what it gives (the heart of the soup))),
1 1/2 cups vegetable or chicken broth
(Adjusts the consistency.)
1 teaspoon sugar
(= balances the acidity of the tomatoes.)
Dried basil (optional) ½ teaspoon
(Adds a subtle herbal note.)
Salt and pepper, to taste
Instructions:
Sauté the Aromatics:
In a pot heat over medium heat, the olive oil. Heat the onion and garlic until softened and fragrant.
Simmer the Soup:
Next add the crushed tomatoes, broth, sugar and basil (if using). Simmer, 15–20 minutes, until boiling. The smell still makes me wait for dinner/wait for us to eat so bad.
Blend (Optional):
If you want the soup to be smooth, pass it through an immersion blender.
Season and Serve:
Taste salt and pepper, then ladle the soup into bowls.
