Sugar: 1–2 tbsp (adjust to taste)

Dijon mustard: 1 tsp

Celery seed: ½ tsp (optional, for flavor)

Salt and pepper: To taste

Step-by-Step Instructions

Step 1: Prep the Vegetables

Either finely shred the green cabbage, red cabbage (if using), and carrots with a sharp knife, mandoline or food processor.

Admittedly, I set them in a big mixing bowl.

Step 2: Make the Dressing

Whisk together mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed (if using), salt, and pepper and whisk until smooth in a small bowl.

Step 3: Combine

Add dressing over the shredded vegetables.

Toss well to coat evenly.

Step 4: Chill and Serve

Refrigerate for at least 30 minutes, covered, to let flavours meld.

Toss again before serving.
