On a parchment lined baking sheet, spread cookies out and bake for 8–10 minutes until edges are firm. Then allow to cool for 5 minutes and transfer to wire rack.

4. Preparing the Filling:

Cream the butter until smooth and creamy. Mix thoroughly as you gradually add the powdered sugar and cocoa powder.

Beat in the vanilla and heavy cream until the filling is fluffy and spreadable. I couldn’t resist the filling, so this step always reminds me of the screeming of excitement of tasting that filling.

5. Assembling the Sandwiches:

Fill the flat side of one cookie with the filling, and spread or pipe filling onto the cookie. Form a sandwich by topping with another cookie. For the next cookie, repeat.
