My Experience: Fusion at Its Best

I’ve always had fried rice on speed dial for quick and delicious meals. Chinese fried rice takes this classic dish to a new level by adding the smoky, savory goodnes of sausage and the umami richness of Chinese fried rice. This was the first time I made this and it was a universal mix of comfort and excitement and with every bite exploding flavors.

Chinese Fried Rice with Sausage Recipe.

Ingredients (Serves 4):

Cold, day old rice works best, 2 cups cooked.

Or use two Chinese sausages (lap cheong), thinly sliced.)

2 eggs, beaten

mixed vegetables;Peas, carrots, corn, etc.;1 cup

Finely chopped 1/2 small onion

2 cloves garlic, minced

2 tablespoons soy sauce

1 optional oyster sauce (for extra umami.).

1 teaspoon sesame oil

Vegetable oil, 2 Tablespoon (for cooking.)

(chopped) For garnish: 2 green onions.

Salt and pepper to taste

Instructions:

Prepare the Ingredients:

Make sure the rice is cold otherwise it will clump. Spread fresh rice on a tray and let cool for 20–30 minutes.

Cook the Sausage:

In a large skillet or wok over medium heat, heat 1 tablespoon vegetable oil.

Sliced the sausage and stir fry 2–3 minutes until slightly crispy. Remove and set aside.

Scramble the Eggs:

Drain the sausage, push the sausage oil to one side of same skillet and add the beaten eggs.

Lightly scramble and cook until just set or under. Set aside with the sausage, removing it and discarding it.

Sauté Aromatics and Veggies:

To the skillet add another tablespoon of vegetable oil.

Heat a wok (or large skillet) over high heat, swirl oil about until pan is almost smoking, and add garlic and onion, and stir fry until fragrant (about 1 minute). Your mixed vegetables are then added and you stir it for another 2 minutes.

Stir-Fry the Rice:

Break clumps of cold rice with a spatula in the skillet, then add the rice.

Heat in your pan for 2–3 minutes, until the rice is well heated throughout.

Season the Rice:

Mix in the soy sauce, oyster sauce, sesame oil. Stir well to coat the rice.

Combine Everything:

The sausage that was cooked and scrambled eggs put back into the skillet. Add all and stir another minute.

Garnish and Serve:

Chop green onions and sprinkle them on top, and serve hot.

Tips for Perfect Fried Rice

Cold Rice is Key: Rice becomes less mushy when not refrigerated more than 1 day.

High Heat Cooking: It keeps the ingredients from steaming and gives it a smoky flavour.

Prep Everything Ahead: Fried rice cooks quickly so prepare all ingredients before hand.

Use a Wok: It has high sides and is evenly heated — so it makes stir frying easier.

Variations to Try

Spicy Fried Rice:

For a little more heat, add a teaspoon of chili oil or sriracha.

Seafood Twist:

Instead of swap in sausage the swap in shrimp or crab meat.

Vegetarian Option:

Instead of sausage, use tofu or mushrooms.
