My Chili Experience
When I first made a pot of chili from scratch, I didn’t believe how much flavor you can pack into one dish. It was a hearty meal packed with spiced tender meat and beans, loved immediately by everyone in my family. And now it’s my go to recipe for game days or when I’m craving something warm and filling.
Ingredients
For the Chili:
Ground beef: Either 1 lb of beef or mix of beef and pork.
Olive oil: 1 tbsp
Onion: 1 medium, diced
Garlic: 3 cloves, minced
Bell peppers: 1 diced (red, green or mix)
Crushed tomatoes: 28 oz can
Tomato paste: 2 tbsp
Kidney beans: 15 oz can, drained and rinsed
Black beans: 15 oz can, drained and rinsed
Beef or chicken broth: 1 cup
Spices:
Chili powder: 2 tbsp
Cumin: 1 tsp
Paprika: 1 tsp
Oregano: 1 tsp
Cayenne pepper: ¼ tsp (optional, for heat)
Salt and pepper: To taste
Optional Toppings:
Cheddar cheese: Shredded
Sour cream
Green onions or cilantro: Chopped
Avocado slices
Tortilla chips or cornbread
Step-by-Step Instructions
Step 1: Cook the Meat
Put some olive oil in a very large pot or Dutch oven over medium heat.
Use a spoon to break the ground beef into crumbles, and cook it until it’s browned. If so remove excess grease.
Step 2: Sauté the Vegetables
Diced up the onion and bell peppers and stir them in. Back in the pan, cook for 5–7 minutes or until softened.
Further, sauté the minced garlic for another minute until fragrant.
Step 3: Add the Spices
To that, add oregano, cayenne (if appropriate), salt, and pepper and chili powder, cumin, paprika. Toast the spices, cook for 1–2 minutes to toast the spices and to deepen the flavor.
Step 4: Build the Base
Now add in the crushed tomatoes, tomato paste, the beans, and the broth. Stir to combine.
Step 5: Simmer the Chili
Place it on a gentle boil and then reduce heat to low.
Stir occasionally and cover and simmer for at least 30 minutes. To get even more flavor, simmer it for 1–2 hours.
Step 6: Serve
Poured the chili into bowls and dished on what you’d like. Serve with cornbread or tortilla chips, hot.
