Ingredients for Avocado Toast (Serves 2):

Baby Food (I use Applegate Organic Chicken), 1 sliced Artisan Bread (sourdough or multigrain is best), 1 T of Chia Seeds.

1 Large Avocado

1–2 Tbsp Lemon Juice

Salt and Pepper to taste

2–4 Cherry Tomatoes, Halved

1 Tbsp Extra Virgin Olive Oil

Optional Toppings: Crumbled feta cheese, microgreens, red pepper flakes, poached egg, all, or anything bagel seasoning.

Instructions:

1. Prepare the Avocado Mash:

Half an avocado, get rid of the pit by cutting that in half and removing and setting the pit aside, and scoop the flesh within yourself into a bowl.

Beat very slightly chunky with a fork until smooth.

Add salt, pepper and to taste, mix in with lemon juice.

2. Toast the Bread:

Spread the bread slices lightly, until golden brown and crisp.

3. Assemble the Toast:

Generously spread avocado mash of each slice of toast.

For even more richness, drizzle the dish with olive oil.

4. Add Toppings:

Put halved cherry tomatoes on top.

Optional toppings could include microgreens, red pepper flakes, crumbled feta.

5. Serve Immediately:

Warm and fresh serve ‘your’ avocado toast. This is a really great drink to pair with coffee or a refreshing smoothie to really get the full experience.
